A “berry” good way to start the day!
Berries are loaded with fiber and antioxidants… which we all need more of in our lives and…
Chia seeds are rich in fiber, essential fatty acids, vitamins A, B, E, D, and minerals, Sulfur, iron, iodine, magnesium, manganese, niacin, and thiamine… AND antioxidants! Their nutrients are even more bio-available when you soak them! Thus this pudding is a no-brainer, dude!
Since we are moving out of berry season I’m getting my fill this morning topping them on my latest obsession chia pudding. The great thing too is this recipe is kid-friendly too!
Here is the super simple recipe:
🍓 2 cups nut milk (I love my homemade nut milks!)
🍓 1.5 cups full fat coconut milk (fat is your brains friend and I absolutely love the organic coconut cream from Trader Joe’s.)
🍓 1/2 tsp vanilla extract or 1/2 inch of a vanilla bean (learn how to use vanilla beans in your recipes here!)
🍓 4 tbsp chia seeds
Mix ingredients in a glass and airtight bowl and whisk well. Put into fridge. For the first 20 minute whisk occasionally to keep seeds from sinking. Keep in fridge overnight or serve in an hour.
Here are some topping ideas:
- Hemp seeds
- Local bee pollen
- Any and all berries
- Roasted or raw almonds or cashews
- Pumpkin seeds
- Maybe a scoop of your favorite greens powder! (My favorite brand here!)
