Sometimes I just get lazy! I don’t want to chop 15 different veggies for my salad… yeah that’s me. I’m addicted to chopped salads with lots of ingredients, texture, and flavor.. but it can take me up to 30 – 45 minutes just to create a darn salad.
Anyway, I threw this together in less than 5 mins… and it was DELICIOUS!
Let’s do this:
Simple Tomato Cucumber Salad
1 medium cucumber sliced
4-5 cherry tomatoes – cut into circles too 🙂
1 avocado – sliced
Handful of Arugula or Basil
2-3 Tbsp of sprouted sunflower and/or pumpkin seeds
Drizzle about 2 tsp of avocado oil
Salt & Pepper to taste
Add a splash of your favorite vinegar (I love ACV or red wine) or just a squeeze of lemon.
On a large plate or bowl, combine the first 5 ingredients then top or lightly drizzle salad with the last ingredients. BOOM!
