I can’t stand to waste ANY precious organic produce… especially sweet summer berries.
Some days my boys will kill a whole box of berries and the next they want nothing to do with them. It’s so confusing.
When they aren’t being devoured at a fast enough pace and I begin to see a hint of mold growing, the freezing process begins! We use frozen berries in smoothies, making berry and banana (n)ice cream, in muffins or pancakes… I mean come on! The options are endless!!

5 Simple Steps to Keep Good Berries from Going Bad
Step 1: Wash berries thoroughly (I use a colander) and pick out any that may have seen better days.
Step 2: Dry completely. I simply place in a clean kitchen towel, pat lightly to remove all moisture and allow the berries to rest for about 5-10 minutes.
Step 3: Line a baking sheet with unbleached parchment paper and lay the berries on a single row. Place in freezer for 30 – 45 minutes.
Step 4: Transfer frozen berries to a freezer safe container (I prefer glass).
Step 5: Place in freezer and use when inspired!!
Paying the price for organic is worth every penny… but wasting this precious produce is not an option.
