Hippie Mom Raw Bars

I really couldn’t think of a better name for these bars that were created in my kitchen. So Hippie Mom Raw Bars it is!

These raw ingredients are nutrient dense, high in fiber, loaded with antioxidants, healthy fats and proteins, and satisfy that sweet tooth with flavor and fullness. Boom.

I made these last week and brought them to a yoga retreat in Sedona… they were a huge hit and many of the amazing women asked for the recipe. I promised to share… but I normally just throw things together and hope whatever I’m creating turns out delicious… not all creations do but these did. #win

This time, I documented the recipe and here it is!! The kids and husband devour them so I have to keep a stash in the fridge for me! Don’t tell.

Let’s do this:

Base Ingredients:
1 cup organic almonds butter (or other nut or seed butter)
1 cup organic raw pecans, cashews, or walnuts
12 dates (pitted)
1/2 cup shredded coconut
1/8 cup chia seeds
1/8 cup hemp seeds
1/3 cup melted coconut oil
3 tbsp grassfed collagen powder **(My favorite brand here) –
(This high quality collagen is gut healing and supports immune and body systems.)

Directions:

Prepare a 13 x 9 inch glass or metal dish by lining it with unbleached parchment paper.

Place all bottom bar ingredients in food processor. Process until all ingredients are mixed well and the consistency looks kinda like this:

Pour mixture into the prepared lined dish and spread with a spatula or hands. Press mixture firmly and evenly.

Chocolate Top Layer Ingredients – the top chocolate layer can be created by using semi sweet chocolate chips, unsweetened dark chocolate, or cacao powder combined with coconut oil. The last two options can be sweetened with honey, maple syrup, or raw coconut sugar.

2 – 2.5  cups organic semi sweet chocolate chips
3/4 cup coconut oil
Sweetened with options above. I use about 1/4 – 1/2 cup sweetener

OR

6 ounces organic unsweetened dark chocolate
3/4 cup coconut oil
Sweetened with options above. I use about 1/4 – 1/2 cup sweetener

OR

1 cup cacao powder
3/4 cup coconut oil
1/4 cup almond butter (or sub alternative nut or seed butter)
Sweetened with options above. I use about 1/4 – 1/2 cup sweetener

Chocolate Top Layer Directions:

Begin to slowly melt chocolate topping ingredients in a sauce pan on low to medium heat. Stir occasionally while making bottom bar layer. Be sure to not burn. Heat low and slow to maintain all the beautiful nutrients in the dark chocolate, coconut oil, and sweetener of choice.

Once ready, pour melted chocolate over the top and spread evenly.

Place in freezer for 10 – 15 minutes or until hard. Cut into bars and place in an airtight glass container and store in fridge for up to 2 weeks. As if they will last that long!!

They are perfect to take on trips, pack in the kids lunches, or even just eat them all yourself… I promise not to tell.
