I really couldn’t think of a better name for these bars that were created in my kitchen. So Hippie Mom Raw Bars it is!
These raw ingredients are nutrient dense, high in fiber, loaded with antioxidants, healthy fats and proteins, and satisfy that sweet tooth with flavor and fullness. Boom.
I made these last week and brought them to a yoga retreat in Sedona… they were a huge hit and many of the amazing women asked for the recipe. I promised to share… but I normally just throw things together and hope whatever I’m creating turns out delicious… not all creations do but these did. #win
This time, I documented the recipe and here it is!! The kids and husband devour them so I have to keep a stash in the fridge for me! Don’t tell.
Let’s do this:
1 cup raw organic (sprouted is best) almonds
1 cup organic raw pecans, cashews, or walnuts
12 dates (pitted)
1/2 cup shredded coconut
1/8 cup chia seeds
1/8 cup hemp seeds
1/3 cup melted coconut oil
1/3- 2/3 cup organic chocolate chips (depends how chocolaty you like them) or sub cacao chips
1 tsp of sea salt and some to sprinkle on top after pressed into bars
1 tbsp of sea salt to put on top after melted chocolate is added.
3 cups organic chocolate chips melted
1/2 cup coconut oil
3/4 cup cacao powder
3/4 cup coconut oil
1/2 cup nut butter
1/4 cup (or more) raw organic honey – sweeten to your taste. I like less sweet as the bars are sweet themselves.
Optional add-ins and/or substitutions:
3 tbsp grassfed collagen powder **(My favorite brand here)
Sub pecans for raw almonds or cashews
Sub organic chocolate chips for cacao nibs
Sub organic chocolate chips for dried cherries
**This was not included in the initial recipe as some of the yoga retreat go-ers are vegetarians. This high quality collagen is gut healing and supports immune and body systems.
Prepare a 13 x 9 inch glass or metal dish by lining it with unbleached parchment paper. Place all ingredients in food processor. Process until all ingredients are mixed well and the consistency looks kinda like this:
Place another sheet of unbleached parchment paper over and weigh down with a few dishes… like this:
Place in freezer for 10 minutes. Cut into bars and place in an airtight glass container and store in fridge for up to 2 weeks. As if they will last that long!!
They are perfect to take on trips, pack in the kids lunches, or even just eat them all yourself… I promise not to tell.
