Meet Hippie Mom, Rachel Crawford!
Rachel resides in Scottsdale, AZ with her husband, little boy and a little girl on the way! She shares some great insight in her journey to healthy and holistic! Check out her DIY Essential Oil Linen Spray and a yummy recipe for broccoli quinoa bites!
Q) What do you love about your city? A) The weather and the scenery.
Q) What is a tip you think every Hippie mom needs to know? A) Create time for yourself. Whether you’re a stay at home mom or working full time, it’s easy to get caught up in the day to day routine and the constant desire to put your family first. I know how it is…trust me. But it’s important to take time for YOU and do something you love! Take a yoga class, pick up your favorite book or treat yourself to a pedicure. Believe me… You DESERVE it!!
Q) What is your go-to recipe or current favorite recipe? A) Broccoli Cheddar Quinoa Bites (See bottom of post for this delicious recipe!)
Q) What is your favorite or most used holistic or natural remedy? A) Essential Oils! I use them for EVERYTHING. Below is a DIY recipe for my favorite lavender linen spray. I spray this on my sheets and pillows before bed.
- 30 drops of lavender essential oil (I use Young Living)
- 3 oz. rubbing alcohol or vodka
- 5 cups distilled water
- Glass spray bottle
- Funnel (or mix in a glass measuring cup for easy pouring)
Mix essential oils with rubbing alcohol or vodka into a glass. Add 1.5 cups of distilled water to the mixture. Pour into spray bottle. Shake the bottle before each use. Enjoy!
Q) What is one thing you can’t live without? A) My family! Nothing is more important to me. I couldn’t imagine my life without them.
Q) What is your favorite healthy food? A) Salads! Salads! Salads!
Q) What do you incorporate into your daily life for optimal health? A) Every morning I make a smoothie and I try to juice at least once a day. This is the best way for me to get fruit and veggies in my diet and my son loves them too.
Q) What was the best advice you received from another Hippie Mom/Woman? A) Trust your instincts!! You know what’s best for your children.
Q) What healthy habit or healthful food have you always wanted to try or incorporate into your life but haven’t? A) I would love to start shopping at local farmer’s markets and support my community on a weekly basis. I feel it’s imperative to support local farmers and it’s a healthier option than what’s at the grocery store.
Q) What is your least favorite house chore and why? A) Cleaning windows!!! Yuck! I don’t know why I dislike it so much but I would be happy if I never had to clean another window in my life.
Q) What do you do for yourself on a daily or weekly basis? A) I try to hit the gym as much as possible. It’s the only hour I have completely to myself. It keeps me energized, refreshed and ready to conquer the world.
Q) What is the biggest challenge eating healthy? A) Well, I’m 34 weeks pregnant with my second child and there are days I just want to indulge in some delicious chocolate ice cream… preferably rocky road.
Q) What is one healthy goal you want to incorporate or accomplish in your life over the next several months? A) I would LOVE to start volunteering. I feel so fortunate and blessed and would love to help others in need. Soul food!
Q) What is something you can share with us that is funny, embarrassing, or vulnerable? A) I secretly love One Direction! Ha!
Q) What hobbies or passions do you have? A) I’m passionate about being a mother! I’ve always wanted children and I’m excited that we will be a family of four come August.
Q) What is one of the most important experiences you have learned from in your life? A) You can’t make everyone happy! Listen to your heart and trust in yourself to know that you’re making the right decision. Love comes first!!
Q) What is the one thing you wish you embraced more about yourself? A) I wish I could maximize my potential and be the best version of myself.
Q) If you could talk to future self (10 years from now), what would you ask or tell yourself? A) How was the last ten years?!
Q) If you could only eat one thing every day, for every meal, what would it be? A) PASTA! I LOVE pasta and could literally eat it for every meal and snack if I could. Why can’t pasta be as healthy as broccoli??
Q) Was there a time or experience that changed the way you lived and guided you on a more healthy and holistic path? A) Becoming a mom! I’m not perfect but I’m constantly learning something new. I try to incorporate new healthy habits all the time.
Broccoli Cheddar Quinoa Bites:
- ¾ cup uncooked quinoa, rinsed
- 1½ cups water (or vegetable broth or chicken broth)
- 2 eggs, lightly beaten
- 2 cups organic broccoli florets, finely diced
- 1 cup organic yellow onion, finely diced
- 1 garlic clove, finely minced
- 1½ cups shredded cheddar cheese
- ½ teaspoon paprika
- Crushed red pepper (optional) to taste
- In a medium saucepan, combine quinoa and water (or broth) and cook according to package directions. Let cool.
- In a large bowl, combine cooled quinoa, eggs, broccoli, onion, garlic, cheese and paprika.
- Preheat oven to 350° F. Spray mini-muffin tins with cooking spray.
- Put a heaping tablespoonful of quinoa mixture into prepared muffin cups. Bake for 15 to 20 minutes, or until edges turn golden brown. Remove from oven and let cool for 5 minutes and then gently remove from pan to cool completely.
