It’s that time of year! Treats, cookies, desserts galore! Yay?
I remember a time when I consumed endless amounts of sugary treats and didn’t think twice about it…. until they left me feeling gross and sick.
I just can’t eat crappy sweets anymore… so I opt for raw and nutrition-filled delicious desserts like this one for the holidays. This recipe is so easy, requires no baking, and creates a dessert you actually want your kids to eat!! BOOM!!
Oh and the orange oil infused in these bites creates a perfect balance and a yummy Fall-ish flavor.
Let’s do this:
Raw Orange Almond Coconut Bites
- 1 cup finely shredded coconut – divided in half (Half to mixed into balls and other half to roll balls into.)
- One cup almond butter
- Half a cup dried cranberries and half a cup goji berries
- Half a cup raw unfiltered honey
- 1 teaspoon sea salt
- 3 tablespoons chia seeds
- 3 to 6 drops of wild orange essential oil
Line a baking sheet with unbleached parchment paper. Place all ingredients into a bowl and mix with spoon until well combined. Roll the balls into the remaining shredded coconut and place on the prepared baking sheet. Place in refrigerator for approximately 30 minutes or until they harden. Store in an airtight container and in fridge.
Some other add ins are chocolate chips, sprouted seeds, raisins and chopped almonds.
