This is our current favorite breakfast, granola with sliced apples, bananas, chopped cashews, raisins, (more) cinnamon, hemp & chia seeds, and cashew milk. It’s super quick and simple to throw together, bake, enjoy. It’s yummy and filling!
When I was inspired to make this, I was literally in the middle of cleaning and a craving for granola came on strong. I dropped everything preheated the oven and went to work… unsure of what kind of granola I was going to create.
I wanted to make it simple… I’ve created granola with lots of dried fruits but it just seemed to limit how we could use it. Personally I prefer the oats and seeds more than anything else so this was right up my alley. The beautiful thing is you can always make it different… the options are endless!
Let’s do this!
Ingredients: (all organic ingredients recommended)
3 cups sprouted oatmeal
1/2 cup shredded coconut (melted)
1/2 cup sprouted sunflower seeds (sprouted pumpkin seeds are also a great alternative or addition)
1/2 cup organic raw buckwheat groats (optional)
1 tbsp of cinnamon (more or less as desired)
1 tsp of sea salt (I LOVE mine salty so salt to your taste)
1/2 cup coconut oil (I like to use 1/2 cup of coconut oil as it makes it crispy and more flavorful but you can half it too)
1/4 cup sweetener (I prefer maple syrup)
Additions: (all organic ingredients recommended)
1/8 cup chia seeds
1/8 cup hemp seeds
1 cup dried cherries, apples, raisins, apricots, blueberries, etc.
1 cup chopped nuts (almonds, cashews, or walnuts!)
Preheat oven to 350 degrees. Mix the first five ingredients in a medium size mixing bowl. Add in the melted coconut and sweetener of choice. Mix until dry ingredients are coated. Prepare a baking sheet lined with parchment paper. Spread evenly and place in oven. Cook for 10 minutes. Remove from the oven to stir, then place it back into the oven for another 5 minutes. Keep an eye so that it does not burn… Granola should be toasted but not burned… unless you are like the few that enjoy burnt food (like my dad).
Add in optional ingredients once cooled. Store cool place in an airtight glass container. Use on top of plant-based yogurts, smoothies, or with your favorite nut milk!
